Upholding Academic Excellence in Food Science and Nutrition: DFSN Students Win at the 50th DOST-FNRI Seminar Series Undergraduate Research Competition

The College of Home Economics proudly congratulates the students and their thesis advisers from the Department of Food Science and Nutrition (DFSN) for their outstanding achievements at the 50th Department of Science and Technology’s Food and Nutrition Research Institute (DOST-FNRI) Seminar Series Undergraduate Research Competition, held on July 3-4, 2024, at the Sheraton Hotel, Pasay City, Metro Manila.

Our students’ exemplary research and dedication were recognized and awarded across various categories, showcasing the depth and impact of their work in the field of food science and nutrition.

In the Nutrition and Dietetics category, the study titled “Nutrition Knowledge, Eating Practices, and Maternal Characteristics Among Selected Filipino Female Adults under the Sandwich Generation” emerged victorious, clinching the first-place award. This insightful research, presented by Alyssa Arnaco, Juan Diego Caña, Marc Ishmael Pulido, and Dominique Nicole Ricardo, under the guidance of Dr. Maria Fema Aquino, highlights the critical intersection of nutrition knowledge and practices among Filipino women.

In the Food Science and Technology category, two innovative studies from our students garnered top awards. Jeremiah Abog’s research on “Detection of Honey Adulteration with C3, C4, and CAM Sugar Syrups using Laser-Induced Breakdown Spectroscopy,” advised by Dr. Ma. Leonora Francisco, secured the first-place award. This groundbreaking study offers significant advancements in ensuring the purity and quality of honey products.

Additionally, Elise Yabut’s study, “Development of an Analog Meat Product using Philippine-sourced Elkhorn Seamoss (Kappaphycus alvarezii) Protein Concentrate,” with adviser Mr. Mark Paulo Tolentino, earned a commendable third-place award. This research contributes to the development of sustainable and innovative meat alternatives, reflecting the growing trend and necessity for plant-based nutrition.

These remarkable achievements underscore the dedication, hard work, and academic excellence of our students and faculty in the Department of Food Science and Nutrition. We are incredibly proud of their contributions to advancing knowledge and innovation in food science and nutrition, and we look forward to their continued success and impact in the field.
